4/04 Thursday Meal: Thai Green Curry Pork and seasonal vegetables.

This green curry paste may be my favorite sauce I learned how to make in Culinary school! When I make a batch I always make enough to freeze extra for future meals.
The Thai curry with pork is cooked in rich coconut milk and green curry paste with seasonal vegetables which make it a healthy and filling meal. The dish can be made with tofu if preferred, but since some fish sauce is used in the curry base it will not be a vegetarian meal.

The curry is served with Jasmine Rice and a small side of Asian cabbage slaw.
