An Indo-Mexican Taco night! (I know! It’s not Taco Tuesday yet.)
Roasted cauliflower, sweet potato with refried chipotle chana dal on a soft wheat tortilla topped with mint chutney crema and pickled onions. A red cabbage, carrot, jalapeño slaw marinated with lime juice and cilantro can be served as a side salad and/or used to top off the tacos for added crunch and flavor!
Each meal is enough for 3 tacos plus side slaw.
